I am not the most able or adventurous of cooks, but I like to think I’m willing to have a go. I had some leftover stilton in the freezer, so bought some broccoli this week to make some soup. I’ve made soup in the past and, despite assurances from family and friends that it was easy, have always made a pig’s ear of it, so I wasn’t optimistic about the results! The recipe I found was on the BBC Good Food website and it looked simple enough for me…
Broccoli and Blue Cheese Soup
1 large onion, roughly chopped
1 large potato, peeled and cubed
1l vegetable stock
1 head broccoli , about 300g, roughly chopped
blue cheese, such as Stilton or roquefort, about 100g, crumbled
– Cook the onion in 1 tbsp olive oil in a large pan until soft (about 5 minutes).
– Add the potato and stock and simmer until the potato is tender (about 10 minutes).
– Add the broccoli and cook for 3-4 minutes until just tender but still bright green.
– Add half the cheese and whizz to a smooth soup in a blender.
– Season then serve with the rest of the cheese crumbled over
And this was the result:
It looks a little more yellow than the example, but I think that’s because my broccoli was on the turn… Nevertheless it tasted delicious and the recipe made enough for four servings.
