Another good week last week – we stuck to the plan 100%, which must be unprecedented! I really enjoyed the fajitas as we’ve not had them for a long time and I managed to get a leftovers portion in the freezer, so I can have them again this week. Another good dish was my tomato and mozzarella tart. This was a recipe I made up for the BBC Good Food Thrifty Cook competition to produce a meal for 4 for under £5, so I won’t blog the recipe until I find out the result of the competition. The recipe came in at £3.87 including a fair sized portion of potato wedges.
So this is our meal plan for this coming week:
Saturday – Pork and Apple Burgers in buns
Sunday – Salmon/Fish Fillet
Monday – Leftovers
Tuesday – Lasagne and Garlic Bread
Wednesday – Turkey and Coconut Korma
Thursday – Leftovers
Friday – Pukka Pie and chips for Daddy, we’re away!
As you can see, on Friday the kids and I are going visiting so we won’t be home – hence the Pukka Pie for Mr W. The rest of the plan is a bit of a put-together as I’ve been clearing out more cupboards so have found various ingredients that really have to be used.
The only new recipe is the turkey curry. I bought some turkey steaks last week so had a quick look on the British Turkey website and that took my fancy. I shall also blog the pork burgers as it’s a recipe of my own invention (mwah ha ha ha).
