A couple of weeks ago I happened to be at Asda when they had quite a bit of reduced meat and I was really pleased to pick up a pack of pork mince for half price, as I have a cobbled together recipe for pork burgers which I think is really nice.
Essentially, the recipe mix can be fashioned into any kind of shape or size e.g. kofta-style or burger or meatballs, but we tend to have it as burgers. I used to have a Tupperware burger press which was quite good for getting a uniform burger, but it seems to have been lost over several house moves, so it’s now just hand-formed burgers which do vary in size somewhat!!
So the recipe:
Pork and Apple Burgers
500g Pork Mince
1Tsp Garlic Paste (or chopped garlic if you’re not lazy!)
1 Slice of bread made into breadcrumbs
1Tbsp Capers, chopped finely
5 Peppadew Peppers, chopped
1. Combine the ingredients in a bowl and mix well (hands are best, but can do it with a spoon)
2. Rest in the fridge for about 15 minutes, or make in the morning and rest in the fridge til teatime
3. Take small balls of the mix and shape into burgers
4. Grill on high until the juices run clear (15 minutes on my grill, but they do vary)
There you go, very simple, one bowl cookery – I like it! This recipe makes 9 burgers, about the size of a coaster, so depending on the sizes you make it may make more or less than mine. We had our last lot served on buns with salad, as pictured, but they are find served alongside veg etc. The Peppadew peppers are sweet chillies, so give a little bite, but not very much so if you prefer a bit more warmth then you can add a tsp of chilli which I used to do pre-children!
They look a little rough, but taste loverly!
Oh, that’s mustard on the top of the roll. Honest!
